Any oatmeal cookie lover will fall in love with these cookies! However, it contains no oats, but we have found the best replacements that replicate the oatmeal flavor perfectly! P.S. Enjoy!
Ingredients
1 cup of unsweetened coconut flakes
3/4 cup of walnuts or pecans
1 tablespoon of cinnamon
1 cup of almond flour
2/3 cup of coconut sugar
1 teaspoon of baking powder
1 pinch of salt
2/3 cup of melted coconut oil
1 egg
1 teaspoon of vanilla extract
1/2 cup of chocolate chips or raisins (or both)
Directions
1. Preheat oven to 350 degrees & line cookie sheet with parchment paper or olive oil spray
2. Blend together walnuts/pecans with the coconut flakes until mixed together (so it looks like oats)
3. In a medium mixing bowl, combine cinnamon, almond flour, coconut sugar, baking powder & salt
4. Add in the blended coconut flakes and nuts, mix by hand until fully combined
5. Add the egg, vanilla & coconut oil and mix
6. Pour in chocolate chips/raisins
7. Scoop batter onto the cookie sheet and press the cookies down a little
8. Cool & enjoy
