P.S. Chewy Almond Butter Cookies

These gooey and chewy paleo almond butter cookies are out of this world. Sugar-free and grain-free following the paleo diet. P.S Enjoy!




Ingredients

1 cup of almond butter

3/4 cup of coconut sugar

1/2 teaspoon of baking soda

1 pinch of salt

1 large egg

1 teaspoon of vanilla

1/2 cup of dark chocolate chips


Instructions

1. Preheat the oven to 350 degrees

2. In a medium bowl beat together almond butter, coconut sugar, baking soda & salt at medium speed.

3. Add in egg & vanilla on low speed until incorporated (don't over mix)

4. Stir in chocolate chips

5. With a tablespoon, scoop batter onto a cookie sheet lined with parchment paper

6. Gently press down to flatten the cookies

7. Bake for 8-10 minutes

8. Cool & Enjoy
